Lightning of Terroir: Dátil

Lightning of Terroir: Dátil explores the relationship between terroir, technique, tradition, time, and taste. Inspired by Kris’ childhood road trips through the deserts of Southern California, it pays homage to the roadside farm stands famous for their date milkshakes—an iconic taste of place in the region.

While dates inspired its sense of place, the beer is rooted in Belgian abbey brewing traditions, English brewing heritage, and the transformative power of time in whiskey oak barrels. We began with Lightning of Dioscorus, our Belgian-style Quad, and matured it for over two years in Heaven Hill and Willett bourbon barrels. We then blended in fresh Russian Imperial Stout before conditioning the blend on Deglet Noor dates—the same variety used in those famous milkshakes—and whole vanilla beans.

The result is a luxurious, full-bodied beer with notes of molasses, Fig Newtons, toasted marshmallow, dark chocolate, and mulling spices. Dates, vanilla, and barrel-aged complexity culminate in a decadent, dessert-like finish with a hint of Bourbon warmth.
